A monthly-changing menu of colourful, plant-based food inspired by the Mediterranean.
A calm, thoughtful cookery demonstration rooted in the seasons, focusing on vegetables, herbs, grains and olive oil - the bedrock of many Mediterranean cuisines. If you are looking for a cookery class in Dorset that feel personal and welcoming, rather than showy or overwhelming, this is an opportunity to learn by watching, asking questions and understanding how dishes really come together. Alongside teaching, I also work privately as a chef for high-profile clients, which keeps my cooking inspirational, fresh and flavourful, whilst using recipes that are practical, reliable and designed to be cooked again at home. What you will learn: This is a small group cookery demonstration, designed to give you techniques and understanding you can use at home. You will learn how to: • Build depth of flavour in vegetarian Mediterranean cooking • Cook seasonal vegetables so they feel complete and satisfying • Use olive oil, herbs, citrus and spice with confidence • Put together balanced, seasonal menus that work as a whole meal • Cook a Mediterranean feast designed for sharing • You will take home copies of the recipes and a detailed timing plan to help you recreate the dishes. You'll learn how to make: • Spinach & creamy goat’s cheese frittata • Smashed new potatoes with ranch dressing and charred tenderstem broccoli • Radish, olive, anchovy & parsley salad • Spring salad leaves with garlic miso dressing • Rhubarb, marmalade & rosemary cake What the experience feels like: The class takes place in my kitchen in Motcombe, Dorset, with a maximum of 6 guests. Unhurried and welcoming, there’s time to watch, taste, ask questions then sit down together to eat the lunch I’ve prepared. More like being invited to a friend’s for supper than a formal lesson, this is a relaxed food experience as well as a learning one.
